Freezing loss (%) of the catfish fillet during freezing was calculatedas [(weight of fresh fillet weight of frozen fillet)/weight offresh fillet] 100. Frozen samples were evaluated for moisture,relative moisture loss, weight loss, TBA, and color after one day, onemonth, three months, and six months of storage. Moisture contentof fresh and frozen fillets was determined according to AOACmethod 930.15 (AOAC, 1999).
